Modest Marce is a food blog by baker, writer, recipe developer, food photographer & stylist Marcella Dilonardo.

Based in Canada, Marce creates beautifully shot recipes ranging from sweet treats like roasted blueberry + green tea ice cream and cinnamon roll challah bread to savoury comfort food like caramelized onion + gouda mac & cheese and wild mushroom & rosemary fritatta.

There’s pretty much nothing that this super talented woman hasn’t covered, her recipes are beautifully crafted and shot creating a very peaceful and relaxed experience.

How did food blogging come around for you? Did you wake up one day and decide that you wanted to document your creations online?

Pretty much! I was bored & feeling discouraged at my job in the financial district & thought it would be fun to start a blog to document all my creations. Before the blog I honestly baked every other night to bring some joy to my week day nights. So many times I would whip something up & not remember what I did differently to make it taste so good. The blog is a great place to document the recipes I alter & the ingredients I swap out.

What's the purpose behind Modest Marce? There's a real demand for non-traditional, delicious and creative recipes nowadays which you clearly cover, but what was your main goal when you set off to share your recipes with the world?

My main goal was to come up with unique recipes that used very minimal & affordable ingredients. I wish I was someone who had a pantry full of fancy things, but I don’t! So each recipe I try to use the basics everyone would have on hand in their pantry’s & add in one or two unique ingredients or “fancy” flavours to keep things fun + interesting.

Caramelized Onion + Gouda Mac & Cheese

The way you incorporate flavours within recipes is wonderful and it's one of the reasons why I was drawn to your blog. Where do you take inspiration from?

I take inspiration from the flavours & produce that is in season. I try to stick with seasonal ingredients because it is the most affordable way to bake! As you will see this month, I have shared a lot of apple & pumpkin recipes because I may have bought a huge bushel of apples from the orchard down the street from my house:) It is crazy how many sweet & savoury recipes you can whip up with something as basic as apples!

What's your favourite food and cuisine? Do you feel it influences your recipes or do you try to test other waters?

Off the record, I love chicken wings. It has been & always will be one of my favourite guilty pleasures. But cuisine wise, I have to stick to my Italian roots. Nothing compares to freshly made spaghetti & tomato sauce that has been simmering on the stove all afternoon. My mom makes the best pasta from scratch & this year I have started to learn from her myself.

How long does it take you to shoot a recipe? Many people think food blogging is a very flawless process (I can attest to the opposite). What steps do you typically follow?

A whole afternoon! Longer if I am doing process shots as well. I usually start by getting my recipe & ingredients in order, pulling out the props required & going from there. The hands in frame process + pour shots are my favourite ones to shoot.

Wild Mushroom & Thyme Phyllo Tart

When creating or modifying a recipe to create something new, sometimes things don't really go to plan and it can be really frustrating to keep going with it. Is this something that has happened to you? How do you cope with setbacks? Do you have a go-to routine to avoid mishaps?

I have gotten to the point where mishaps do not happen very often, but there is always the one recipe that does not turn out. There is nothing I can do but toss it & try again. The worst one was when I trying to make a marble olive oil bundt cake. It turned out SO bad, I didn’t even try again so you won’t see that on the blog any time soon!

What's your favourite part of food-blogging? (Eating your creations doesn't count, everyone loves that part!)

The photography. I absolutely love taking photos of food. I love it even more when a shoot goes extremely well & I am on cloud nine for the rest of the day!

What are your favourite food-blogs and why?

My two favourite food-blogs that I have been following for a very long time are Smitten Kitchen & Simply Recipes. They are always my go to for basic recipes because I have never made a bad recipe by them! I love that they also use very simple ingredients in the recipes too.
